Instructions to make Chole Kulche:
- Soak the Dry Peas in water for Overnight. They will fluff and get double their size by morning.
- Boiling the dry chola - Take a the cooker. Add dry chola, water, 1/2 Tsp Salt, a pinch baking Soda, small amount of tea power,and Turmeric Powder in a cooker. Mix well and close the lid of the pressure cooker.Switch the stove on high flame. We need to bring it to a boil.
- Heat the oil in a on medium heat. Once hot add cumin seeds. Then add paste of ginger,garlic, & onion. Sprinkle some salt.Cook till oil starts to leave and moisture is evaporated.
- Then add red chilli powder, turmeric powder, coriander powder, jeera and black pepper powder and garam powder.Mix well and cook it. Add 2cup of water. Cover with lid. Put the weight on. Let it cook for 10 minutes on medium heat.
- Stir with a spatula. Add imli purie and some coriander leaves.mix well.Then turn off the stove, chole is ready to serve. Prepare the kulcha.
- Prepare the kulcha–Preparing the Dough - In a large mixing bowl combine warm water and sugar, stir until the sugar is slightly dissolved. Add the yeast and give it a good stir. Allow the mixture to proof for 10 minutes.
- After 10 minutes your yeast mixture should look frothy. Add maida, milk, salt and butter, mix all the ingredients.
- Add the coriander leaves and using my hand, continue kneading the dough until form soft and sticky dough.
- Once done transfer the dough in the mixing bowl and cover with a cloth, keep it aside for 1 hour to rise or until it's doubles in volume
- After an hour remove the cloth and sprinkle some dry flour. Using you fist, punch it down. Once done divide the dough into equal rounds.
- Take a rolling pin and chakla, dust it with some dry flour. Roll the dough into round shape.Place a samp cloth on a baking tray, and sprinkle with dry flour. Place the kulcha on the tray and then keep aside for few minutes they double in size.
- Apply some water on the other side of the kulcha and then flip the tava. Cook for further 30 seconds. Continue half cooking all the remaining kulcha
- The Bread kulchas are ready. For serving again heat a tava over medium flame, add butter and coriander leaves. Place the kulcha on the tava and rotate it. Continue to cook on both sides
- Add some gravy of the chole on the kulcha, this will make the kulcha even tastier. Bread style Kulcha is ready.
- Serve the Kulcha with hot Chole, sliced onions and chutney.
