Steps to make Kulche Chane / Chole Kulcha:
  1. For chane :
  2. Drain boiled chana properly.
  3. Take a big bowl add chana, onion, tomato and coriander leaves. Mix well.
  4. Add salt, red chilli powder, chaat masala and chana masala. Mix well.
  5. Add lemon juice, pudina chutney and imli paste. Mix well.
  6. Transfer it to a serving bowl.
  7. For sprinkle :
  8. Mix coriander leaves and ajwain in a bowl.
  9. Keep aside till use.
  10. For kulche :
  11. In a big bowl add maida, salt, ajwain and oil.
  12. Mix all of them very well till the mixture is crumbly like bread crumbs.
  13. Add soda water little by little and knead the dough.
  14. Consistency of the dough should be normal. (Not too hard and not too soft.)
  15. Rub the dough with little oil.
  16. Cover it and keep aside for 15 mins. (Do not keep in fridge).

  19. Slow the flame.
  20. Take a medium size ball from the dough.
  21. Roll it like a little thick puri.
  22. Take water in a bowl.
  23. Take kulcha on your hand and wet one side of the kulcha with water.
  24. Place the wet side of the kulcha on the hot pan.
  25. Wet side of the kulcha should touch the pan.
  26. Brush little oil on the top of the kulcha and sprinkle the coriander ajwain mixture.
  27. Cook on high flame for few min and then turn the pan upside down on the high flame.
  28. Let it cook till the black spots appear on it.
  29. Kulcha will come out easily from the pan then cook it on open flame on high with the help of (chimta) ladle.
  30. When cooked place it on a serving plate and serve hot with chatpata chana.
  31. Serve hot.
