- Chop up the hanpen in a food processor.
- Add the rest of the ingredients to the food processor and switch on.
- Whiz until completely combined. Heat some oil in a frying pan. Add the egg-hanpen mixture, and cook over medium-low heat with the aluminium foil on top for about 3 minutes.
- Put a piece of plastic wrap on top of a sushi rolling mat. When the omelette is cooked, slice it on top of the plastic wrap.
- Roll tightly. Leave to cool slightly, then chill in the refrigerator.
- Finished. It's fine if it's a bit browned! It will form a nice pattern on the cut surface.
