Steps to make Karela Baigan Chatpata:
- Scrap the bitter-gourd,remove the seeds and cut into halves.
- Transfer this into a bowl,add half teaspoon of salt and rest for 30 minutes.
- After that wash the bitter gourd and keep it aside.
- Now heat up 3 tbsp of oil in a pan and fry the eggplant in it until it turns golden brown.
- Remove it from heat and keep it aside.
- Heat 2 tbsp oil in heavy karahi add mustard seeds, cumin seeds, fenugreek seeds and stir for 2 minutes.
- Now add onions fry until it turns golden brown.
- Add turmeric and stir well.
- Now add the fried bitter gourd and eggplant in it and stir well.
- Now add salt,red chilli powder,coriander powder,dried mango powder and mix it well.
- Cook for 5 to 7 minutes on medium heat.
- Now serve hot.
