  1. To the pressure cooker add dhal, 2 tomatoes, half tsp of turmeric powder and cook for 4 to 5 whistles
  2. Once the dhal is cooked smash it and keep aside
  3. To the kadai add 2 tbsp of oil, half tbsp of ghee and add half tsp of mustard seeds, half tsp of urad dhal, half tsp of jeera, pinch of hing, curry leaves, onions and sauté for 2 minutes
  4. Add the cut ridge gourd pieces, turmeric powder, chilli powder, salt and cook for 2 minutes
  5. Add half a cup of water and cover it with a lid and cook till the ridge gourd is soft then add the mashed dhal and adjust the water level according to your wish in a low flame
  6. Garnish with coriander leaves and serve it with hot rice, roti

This recipe involves roasting and blending some spices and I find it easy to use a spice/coffee bean blender for this purpose, instead of. Once in a while i make ridge gourd curry at home as a side dish for chapati/ roti. They taste great with plain rice too, topped with ghee is just the ultimate. Now add the chopped ridge gourd pieces along with turmeric powder, red chili powder, coriander powder & salt. Saute well and add water to it.
