I have made Chef John's amazing and versatile Mushroom Gravy many times. Than I had to make it my own. I use a combination of mushrooms.

Add stock and bring back to the boil. Bring to the boil, then season and serve. Melt butter in a large non-stick skillet over medium-high heat. And not only does this mushroom gravy taste great on meatloaf it's also great on steak!!
Instructions to make Mushroom and groundnut gravy:
- Cut the mashrum, capsicum, big onion, tomatoes into long strips.
- In a mixy jar add coconut, small onion, garlic, ginger, green chilli, groundnut and grind it in to a rough paste.Keep aside.
- Heat a pan add oil, big onion, capsicum, tomatoes, curry leaves roast it well.
- Add mashrum, turmeric powder, coriander powder, cumin powder, salt and mix it well.Cook for 5 mins.
- Add rough paste and mix it well. Add water as required and Cook for 5 mins.
- Add coriander leaves. Now gravy is ready.
So to make this mushroom gravy start off cooking the chopped onion and mushrooms in olive oil, butter or pan drippings (your choice). Mix till all lumps are gone. Stir with whisk frequently until gravy has thickened. Remove from heat and add mushrooms and onions back into gravy. The mushroom gravy is a simple, yet deeply flavorful sauce, that compliments the sliced meatloaf perfectly.
