  9. Get 1 tsp Orange food colour
  10. Make ready OTHER INGREDIENTS:
  11. Prepare 2 tbsp+1tsp ghee / clarified butter
  12. Take 1 bay leaf / tej patta
  13. Make ready 1 inch cinnamon / dalchini
  14. Make ready 5 cloves
  15. Make ready 1 star anise
  16. Take 4 cardamom
  17. Make ready 1/2 tsp black pepper

  19. Take 1 onion, finely chopped
  20. Prepare 1/2 tsp ginger garlic paste
  21. Get 1 1/2 cup basmati rice, soaked
  22. Get 3/4 tsp salt
  23. Get 3 tbsp fried onions
  24. Prepare 1/2 tsp biryani masala powder
  25. Get 3 tbsp coriander & mint, chopped
  26. Make ready 2 1/4 cup water

Biryani is what i often make, atleast once in two weeks. Since it is so easy to make, plus it taste divine. Soya Chunks add great texture to a dish especially for vegetarians. Since Biryani is primarily seen as a non-vegetarian's dish, I thought why not add some kick to a vegetarian biryani by tossing in.

Instructions to make Soya Chunks Biryani:
  1. Firstly, in a large bowl soak 1 cup soya chunks in hot water for 15 minutes. after 20 minutes, soya turns soft and squeeze off the water. keep aside.
  2. In a large mixing bowl prepare the marination by taking 1 cup thick curd. also add ¼ tsp turmeric, 1 tsp chilli powder, 1 tbsp biryani masala powder, ½ tsp ginger garlic paste and ½ tsp salt. whisk well to form a smooth paste. now add soaked soya chunks and mix well and allow to marinate in refrigerator 1 hour.
  3. Further in a pressure cooker heat 2 tbsp ghee. alternatively use oil. add in spices like 1 bay leaf, 1 inch cinnamon, 1 star anise, 5 cloves, 4 cardamom, ½ tsp pepper, 1 tsp cumin. saute till the spices turn aromat. additionally add in 1 onion and saute well followed by ½ tsp ginger garlic paste. add the prepared marinated soya and vegetables to the cooker and level them out.
  4. Now add 1½ cup of basmati rice (soaked for 20 minutes) and spread evenly over marinated soya.
  5. Sprinkle ¾ tsp salt, 3 tbsp fried onions / barista, ½ tsp biryani masala powder, 3 tbsp coriander & mint and 1 tsp ghee. furthermore, pour 2¼ cup of water from sides without disturbing the layers.and also add orange food colour water in centre or little bit in sides.
  6. Cover and pressure cook for 2 whistles on medium flame or if cooking in normal kadai; seal and simmer for 20 minutes on low flame.
  7. Finally, once the pressure settles down, open the lid and serve the soya biryani along with raita and ENJOY!
