  24. Get 1 tsp Red chilli powder
  25. Prepare 1 tsp Kashmiri red chilli powder
  26. Prepare 1 tsp Cumin powder
  27. Take 1 tsp Coriander powder
  28. Make ready 1 tsp Garam masala powder
  29. Make ready 1/2 cup Fresh malai cashew nuts paste
  30. Prepare 1 handful coriander leaves
  31. Get For vegetable layer
  32. Take 1 cup peas
  33. Prepare 2 Carrot
  34. Get 1/2 cup beans
  35. Make ready 1/2 cup cauliflower
  36. Get 100 gm Paneer
  37. Prepare Spices for vegetable layer
  38. Prepare 4 Dry red chilli
  39. Take 1/2 Inch cinnamon stick
  40. Take 1 chopped onion
  41. Take 7 garlic cloves
  42. Get 1 Star anise
  43. Take 1 black cardamom
  44. Take 1 green cardamom
  45. Get 1/2 tsp ginger paste
  46. Make ready 1 Chopped tomato

  49. Make ready 1 cup cashew nuts and raisin

This paneer dum biryani recipe is very different than any paneer biryani recipe you must have seen or read. Here I have just marinated the paneer cubes, layered with cooked rice and then dum cooked. First layer is to prepare flavoured rice. Just before serving desi veg biryani, turn upside down on a serving plate, garnish with fried onions.

Steps to make Layered Biryani:
  1. Wash the rice properly & boil it with green cardamom, star anise,salt, cinnamon stick & cloves
  2. Check the rice, if there is no water & boiled properly then add ghee to it & switch off the flame.
  3. Make green chutney with all chutney ingredients.
  4. Divide the rice in three bowls because we need 3 colour of rice.One is white & the other 2 are green chutney mixed rice & beetroot juice mixed rice.
  5. Heat ghee & fry raisin & cashew nuts for few mins & then take out.
  6. Fry paneer cubes for few mins.
  7. Make a paste of dry red chilli, star anise, garlic,black & green cardamom for vegetable layer.
  8. Heat oil & saute chopped onion, tomato & ginger garlic paste for few minutes.
  9. Add red paste & all vegetables.
  10. Add paneer.
  11. Add all spices & some hot water.Let it boil for sometime.
  12. After 10 mins check the gravy & switch off the flame.Don't make much gravy.
  13. For mutton keema heat ghee, add chopped onion,tomato & ginger garlic paste & saute it for a few mins.
  14. Add mutton keema & all spices.Stir it constantly.
  15. After 10 to 15 mins add hot water, cover it & let it cook.
  16. After 15 mins check it.If it is boiled properly then add malai_cashew paste.
  17. Add coriander leaves & switch off the flame.
  18. Now assembling time.Take a big vessel.Put one layer white rice & then put fried raisin & cashew nuts on it.
  19. Now place green rice on it & then place thick mutton keema.
  20. Mutton keema layer.
  21. Put beetroot rice on it.
  22. Place vegetable mixture over it.
  23. Spread some ghee over it & cover it with white rice layer.
  24. Cover the vessel & cook it in low flame for 5 minutes.
  25. Make it cool for few mins & then take a plate & flip the vessel on it.You can see all the beautiful layers of this biryani.
