Recipe from a local Thai restaurant in my hometown. Peel the prawns, leaving the last part of the tail intact, and de-vein. Put the prawns in a shallow dish and toss with the chili, garlic, spring onions, ginger, lemon juice and parsley. Heat the oil in a wok over a high heat. Add the garlic and prawns and stir-fry for two minutes, then remove and set aside. Add the eggs and spread out around the wok to form an omelette shape.
