The ingredients needed to make Goan Chorizo Pulao:
  1. Prepare 12-15 Goan Sausages (Big Size - Remove Skin and String)
  2. Make ready 1 3/4 cups Basmati Rice
  3. Prepare 3 Onions (Chopped)
  4. Make ready 2-3 Green Chillies (Finely Chopped)
  5. Make ready 1 Potato (Cut into small cubes)
  6. Get 2 Tomatoes (Chopped)
  7. Make ready 1 tsp Ginger Garlic Paste
  8. Prepare 6 Cloves
  9. Make ready 1 " Cinnamon Stick
  10. Prepare 2 Cardamoms
  11. Prepare Few Black Peppercorns
  12. Make ready 1/2 tsp Turmeric Powder
  13. Prepare 2 Stock Cubes-Small (Veg)
  14. Take 2 tbsp White Vinegar (For the rice)
  15. Get 2 tbsp Oil
  16. Take 1 tsp Salt (or As required)
  17. Take 3 1/4 cups Hot Water

The first time I had Goan sausages or chorizo as they call it, was in Goa a few years ago. Most recipes call for tomatoes and I skipped them entirely. Garnish with chopped fresh coriander leaves and the potato fries or wedges. Tried your recipe for Goan prawn pulao.

Instructions to make Goan Chorizo Pulao:
  1. Heat oil in a cooking pan. Add all the whole spices. Saute on low heat. Add onions and saute for a minute.
  2. Next add the sausages and the potatoes and continue sauteing on medium heat till the sausage fat releases oil.
  3. Then add the tomatoes and saute for another 6 to 8 minutes till soft.
  4. Add ginger garlic paste and saute for a minute more.
  5. Drain the soaked rice and add to the pan. Add 1/2 tsp turmeric powder, crushed stock cubes and saute gently for a minute on medium heat. (So as not to break the grains of rice).
  6. Add green chillies, 3 1/4 cups hot water, 1 tsp salt and let it come to a boil on high heat. Cover the pan with a lid. Cook on low heat for 10 minutes.
  7. The rice should be almost done but do not open the lid. Let the pan rest for 15 minutes as the rice will cook further in it's own steam. Fluff with a fork and serve hot.
  8. Note: Wash the rice atleast 3 times till the water runs clear. Soak in enough water with 2 tbsp of vinegar for 20 minutes.
