Hello beautiful people welcome back to our channel and today we are doing very simple recipe to try out this quarantine period. In Kenya, matumbo (tripe) is very affordable and it is actually really delicious if done well. Matumbo wet fry is often served with Ugali.
To begin with this particular recipe, we have to prepare a few components. You can have matumbo(tripe) fry using 14 ingredients and 4 steps. Here is how you cook that.
The ingredients needed to make Matumbo(Tripe) Fry:
- Get 1 kg Matumbo (tripe), thoroughly washed and cut into small pieces
- Prepare 1 large Onion cut into cubes
- Get 2 small Bullion cubes (Royco Cubes can do)
- Make ready 1 Green capsicum chopped into small cubes
- Get 2 Tomatoes cut into cubes
- Take 1 tsp Tomato Paste
- Get Bunch coriander chopped
- Take 1 Tbsp cooking Oil
- Prepare 1 tsp Garlic Powder
- Take 3 Cloves Garlic minced
- Take 1/4 tsp Black Pepper
- Take 1/2 tsp Turmeric Powder
- Prepare 1/4 tsp Chilli Flakes (optional)
- Get to taste Salt
When selecting what to buy, try find one that has Under medium heat, fry the onion and ginger in minimal oil(enough just to cook the onion)till it starts to slightly brown. Matumbo is a swahili word which in this context loosely translates to innards. The western world refers to matumbo as tripe and I was pleased that they too indulge in this delicacy. Matumbo also known as tripe is a common delicacy in any Kenyan home which is loved by many.
Steps to make Matumbo(Tripe) Fry:
- In a saucepan add the tripes, little salt, 1 tsp Garlic powder and water and let them boil until the tripes are soft, about 45 minutes to 1 hour. Reserve the boiling liquid.
- In a different saucepan fry the onions until translucent then add tomatoes. Let them cook until they are mushy. Sir in tomato paste and minced garlic and cook for 1 minute.
- Add bullion cubes and all the other spices and let them cook for another minute before adding capsicum and the boiled tripe. If the food is too dry at this point, add the reserved boiling liquid. Let it cook for about 10 minutes and finish off with the dania (coriander). Check and adjust for seasoning then serve with ugali.
- Recipe notes: the tripe can be fatty. Remove all the fat before boiling. Check for salt at the very end because most of the ingredients that have gone into the meal could make it very salty.
Matumbo can be deep fried or made as stew. Normally served with ugali and vegetables of one's. In Kenya matumbo (tripe) is very affordable and if done properly can be one of the tastiest dishes ever. This matumbo stew is thick and hearty and also quite the comfort food. Matumbo wet fry is often served with.
