- Mix the avacado, black pepper, olive oil, lemon juice and salt together.
- Get a tortilla and spread the avacado mix onto it evenly. Try not to spread it all the way to the edge as you want some room for over spill.
- Sprinkle the grated cheese over the avacado and top with the second tortilla. I didn't really measure the cheese I just added a good handful.
- Over medium heat, heat up a frying pan and rub with butter.
- Carefully add the quesadilla for 2-3 minutes then gently flip over.
- Cut into 6 triangles and serve immediately.
