Steps to make Matoke with Matumbo Stew:
  1. Chop the matumbo to pieces then wash. using a jiko, cook the matumbo for 3 hours till soft. if you have a pressure cooker you can use coz it takes around 30 mins.
  2. Peel the bananas and keep aside. Heat cooking oil in a cooking pot then add onions and garlic. fry till golden brown then add tomatoes
  3. Cook till soften then add the green pepper. add the matumbo and bananas
  4. Add a little water maybe 2 small cups. add the to co and salt and cover to cook for 30 - 40 mins
  5. Cool then serve

When cooked, cool the matumbo and cut into your desired shape and size. It's easier to cut them to a uniform size when cooked whole.
