I prefer to use a charcoal stove for boiling matumbo because of the time required to cook them. Peel the plantains, cut into cubes, sprinkle with lemon juice, and set aside.

- Wash and cut the matumbo into small pieces. Then put to boil.
- Boil for 3hrs in a normal jiko and I hr using a pressure cooker. Make sure its soft after boiling
- Using a separate Sufuria /cooking pan, heat the oil the add the onion + the garlic gloves and fry till golden brown.
- Add the chopped tomatoes and stir till soft then add the knorr beef cubes and allow it to melt before mixing with the tomatoes
- Stir then add the boiled matumbo and continue stirring.
- Allow to simmer while dissolving rocyo in 1 /8 cup of water. Then add to the matumbo.
- Stir a few minutes and add salt to taste.
- Add water to create soup then serve.
