  1. Prepare 1 cup cooked rice
  2. Take 1/2 cup slightly mashed corn kernels
  3. Take 1 green chilli– finely chopped

  5. Take 1 tsp black pepper
  6. Take 1/2 cup mozzarella cheese cubes
  7. Take 2 tbsp corn flour powder
  8. Prepare 1/2 cup bread crumbs
  9. Take oil for deep-frying

Instructions to make Arancini:
  1. Take cooked rice to a food processor along with corn and give it a pulse so that both gets slightly mashed
  2. Add salt, pepper, green chilli, amchur and mix well.
  3. Divide the mixture into approximately 15 equal portions and shape each portion into a round golf ball size.
  4. Keep a small mozzarella cheese cube inside each rice ball
  5. Take corn flour into a small bowl and add a little water to make a thick paste in another plate take the bread crumbs for coating.
  6. Take each rice ball roll it around in the corn flour paste first and then roll it around in the bread crumbs and set aside.
  7. Heat the oil in a kadhai on medium high and deep-fry a few balls at a time, till they turn golden brown in colour from all the sides.
  8. Serve hot with your choice of chutney or ketchup
