Instructions to make Methi Matar Pulao and Boondi Raita:
  1. Clean and soak Basmati rice for 30 minutes, drain excess water and keep it aside
  2. Grind ginger garlic cloves and green chillies coarsely. Keep it aside
  3. Heat ghee and oil in a pan
  4. Add all whole spices and saute until aromat
  5. Add onions and saute until it browns
  6. Add ground green chillies mixture, saute until raw aroma disappears
  7. Add methi leaves and saute for 3-4 minutes over medium heat
  8. Add green peas and saute for few seconds
  9. Add all spice powders and mix well. Saute for 1 min
  10. Add soaked rice and saute for 1 min
  11. Add 2 cups water with salt and mix well
  12. Simmer, cover and cook until done
  13. Fluff up the rice with fork gently and keep it aside
  14. Soak 1/2 cup Boondi in warm water for 9 minutes
  15. Whisk curd in a bowl well
  16. Gently squeeze excess water from Boondi and add Boondi to curd. Mix well
  17. Add all spice powders mentioned for Raita with rock salt and whisk well
  18. Add chopped coriander leaves and mix well
  19. Serve Methi Matar Pulao hot with Boondi Raita, pickle and papad
