- Get 1/2 cup Boondi
- Prepare 1 cup curd
- Prepare 1/2 teaspoon chat masala
- Prepare 1/2 teaspoon roasted cumin powder
- Take 1/4 teaspoon black pepper
- Get 1/4 teaspoon red chilli powder
- Take 1/2 teaspoon fennel powder
- Take to taste Black salt/ Rock salt
- Get 2 tbsp chopped coriander leaves
Instructions to make Methi Matar Pulao and Boondi Raita:
- Clean and soak Basmati rice for 30 minutes, drain excess water and keep it aside
- Grind ginger garlic cloves and green chillies coarsely. Keep it aside
- Heat ghee and oil in a pan
- Add all whole spices and saute until aromat
- Add onions and saute until it browns
- Add ground green chillies mixture, saute until raw aroma disappears
- Add methi leaves and saute for 3-4 minutes over medium heat
- Add green peas and saute for few seconds
- Add all spice powders and mix well. Saute for 1 min
- Add soaked rice and saute for 1 min
- Add 2 cups water with salt and mix well
- Simmer, cover and cook until done
- Fluff up the rice with fork gently and keep it aside
- Soak 1/2 cup Boondi in warm water for 9 minutes
- Whisk curd in a bowl well
- Gently squeeze excess water from Boondi and add Boondi to curd. Mix well
- Add all spice powders mentioned for Raita with rock salt and whisk well
- Add chopped coriander leaves and mix well
- Serve Methi Matar Pulao hot with Boondi Raita, pickle and papad
