- For the rice place 2 cups of water on a source pan and let it boil,pour in some salt and cooking oil or margarine according to your preference.
- When the water has boiled wash your rice and rinse it,then pour it in the boiling water.
- Cover and let it cook for 20 min then lower the heat and let it simmer for 5-10 minutes.
- Then check if cooked,if cooked switch of the heat and place it aside while still covered,if not cooked add some bit of water and let it cook for some time.
- For the eggs.
- Clean the onions and tomatoes and chop them into the required size or shape.
- After cutting place them in a bowl and mix them,then add in the eggs and the flavour that is the black paper and salt a pinch each.Mix well
- Then on a non stick pan add some cooking oil that is a table spoon or two let it heat and pour in your egg mixture and let it cook for five minutes then turn sides for the other one to cook.let it cook to your desired colour but don't let it over cook takes about ten minutes to prepare.
- For the spinach.
- Wash well the spinach and chop to the required size,i like mine thin.
- Then chop the onions and place them on a source pan.
- Sweat them for about 5 minutes and add the tomatoes,then let the tomatoes cook and ad a pinch of salt and paper to taste.
- Then add the spinach and cook for about 10 -15 minutes.
- For plating I used some shape cutters for the rice.
