- Soak chole for four hours, add salt and pressure cook for 3 whistle.
- Soak rice for half hour.
- Heat clarified butter in deep heavy bottom pan add paneer saute for 2 minutes remove and keep aside.
- Now in same clarified butter add Khada masala, mustard seeds when splutter add cumin seed when splutter add onion and green chillies saute till change colour.
- Now add tomato saute for 2 minutes. Add ginger garlic paste, red chilli powder, turmeric powder, garam masala powder and chole garam masala powder, coriander leaves and salt, saute for 1 minute add rice and 3 cups of water,give one boil.
- Now add chole,paneer pieces and kasuri methi mix gently cover lid and cook for 20 minutes at low flame.
- Serve with raita(1cup curd, 1 tbs finely chopped onion,1 tbs finely chopped tomato,pinch salt, ½ tsp cumin and pepper powder).
