Steps to make White dhokla:
- Soak rice & urad dal in water. Add methi Dana. Keep it for 5-6 hours.
- Grind it in fine smooth paste. Add salt. Keep it overnight for fermentation.
- Add salt. Grease dhokla dish with oil. Boil water in steamer. Now pour this batter in dish. Keep it in steamer. Steam it on high to medium flame for 10-12 minutes. Check with knife if it is not sticky then remove it from steamer. Let it cool on room temperature.
- Now for tempering heat oil in a pan. Add mustard seeds. Once it pops add sesame seeds & curry leaves. Saute well.
- Pour this temper on dhokla. Cut into square pieces. Enjoy with green chutney or coconut chutney.
We call this safed dhokla aka white dhokla. Because on occasion we make yellow colored dhokla where chana dal is used. So the color name used to differentiate both. White Dhokla (Rice flour Dhokla) is one of the famous Gujarati Dhokla variants. This fermented dhokla is healthy and light sour snacks options.
