Instructions to make Surati Idada (white dhokla):
  1. Soak 3 cups rice 1 cup urad dal for 4 hours, then grind separately.
  2. Mix well rice,daal and ¼ tsp salt.Keep for 7-8 hours for fermentation. Add ginger chilli paste, salt, pinch of asafoetida 1/4 tsp baking soda.
  3. Pour 4 laddle batter into greased thali, sprinkle crushed pepper on it and steam for 15 to 20 minutes and serve.

For making homemade flour mixes for Khaman, Dhokla, Handvo, Dosa, Idli, Kapuriya, I use organic Rice and Lentils. So I do not wash them but if you suspect that Rice or Lentil needs to be washed, then you can follow the soaking Rice Lentil method after washing them well and then grind.
