- Saute for 1 min or so and then add finely chopped onions. Once the onions are translucent, add chopped tomatoes. Then add cumin powder, coriander powder, turmeric powder, salt (to taste), garam masala and chopped coriander. Cook the above mixture till the oil oozes out.
- While above masala is getting cooked, check if the eggplant is roasted (turn the eggplant every now and then so that it is not burnt from one side). If the eggplant is cooked completely. Remove it from the flame and set aside to cool. Once cooled peel off the skin and slightly mash it with the fork and set aside.
- Keep stirring the masala so that it does not burn. Now add the eggplant to the masala, mix well, check if salt is needed. Let the above mix cook for around 2 min on low flame.
