Steps to make Kaju Kotanmbari Vadi:
- Take the mixing bowl add 1 cup of gram flour.
- Next add chopped green chillies, turmeric powder and salt to taste.
- After add chopped coriander leaves and red chilli powder.
- Further, add roughly chopped cashew nuts into the flour mixture.
- Now mix well with the help of whisker or spoon. Then add 1.1/2 cup of water or as required. Mix until the smooth texture appears and lumps free batter.
- Additionally add Garam masala, cumin Powder and Coriander powder mix well.
- In a kadhai heat the oil in over a low heat, once oil is hot add the prepared batter to pan, now add tamarind pulp and cook stirring continuously for 15 to 18 minutes.
- Stir the batter till the mixture comes together to make a thick doughy batter. Remove from heat. Add another 1 tbsp of chopped coriander leaves and mix well.
- Now grease the small tray or plate with oil or ghee. And spread the mixture evenly. Set aside to cool.
- Now take a large kadhai or pan pour some water into it and allow to boil the water. When water starts to boil adjust the flame to low. Then put the batter tray cover and steam it for at least 30 mins so that it sets.
- After 30 mins remove from heat and cut into square or diamond shape as you wish.
- Now heat the oil in frying pan once the oil is heat sufficiently, shallow fry or deep fry the squares till golden brown and crisp. Then remove and drain on absorbent paper.
- Finally, Maharashtrian special Kaju Kotanmbari Vadi is ready. Serve hot with coriander chutney or mint chutney or ketchup.
