The ingredients needed to make Gujarati Kadhi:
  1. Take 1 cup Yogurt/ Dahi
  2. Make ready 2 tsp Gram flour/ Besan
  3. Take 1 tsp Sugar
  4. Make ready 1/2 tsp Ginger paste
  5. Get 3 cups water
  6. Take 1/4 tsp Cumin/ Jeera
  7. Prepare 1/4 tsp Mustard Seeds
  8. Prepare 1 tsp Ghee
  9. Take 1 Cinnamon Stick
  10. Take 1/4 tsp Fenugreek/ Methidana
  11. Prepare 2 clove
  12. Prepare 1 dried Kashmiri Red Chilli
  13. Make ready Pinch Hing/ Asafoetida
  14. Prepare 1 Chilli
  15. Take 2 tsp Chopped Coriander
  16. Prepare Salt as per taste

Gujarati kadhi is a yogurt based thin curry. Gujarati Kadhi is one of the best recipes of Gujarati cuisine. This authentic recipe requires knowledge of cooking with Indian spices and it gets its delicious taste from curd, besan and curry spices. Gujarati kadhi is distinguished by the addition of sugar or jaggery, which provides a subtle sweetness to the dish.

Instructions to make Gujarati Kadhi:
  1. In a mixing bowl, take 1 cup curd and add 2 tsp gram flour, Ginger paste and sugar to it.
  2. Mix all ingredients well
  3. Add 1 cup of water and mix well without forming lumps.
  4. Once the lumps are dissolved, add 2 more cups of water and mix well
  5. Heat a kadhai and add 1 tsp ghee. Once ghee melts add Mustard seeds, Cumin seeds, Clove, Fenugreek seeds, Cinnamon stick, dried red chilli and split green chilli
  6. Transfer the besan curd mixture in kadhai and mix well
  7. Mix on low flame flame for 5 minutes till the mixture comes to boil
  8. Continue to cook for 15 minutes on low medium flame and keep mixing in between. The add salt as per taste and chopped coriander for garnishing. After adding salt cook for 2-3 minutes more.
  9. Gujarati Kadhi is ready to serve with hot steam rice.. ENJOY!!!
