Steps to make Gujarati kadhi and sooji dhokla:
  1. For Kadhi : In a mixing bowl add semolina and curd. Beat thoroughly. Add salt. Now add around 1 litre water and keep on gas to boil.
  2. When the mixture boils lower the flame and cook for half an hour. In between stir the mixture.
  3. Now in a separate pan heat oil and put rai when it splutter add curry leaves and green chilli slice and put this tadka in kadhi. Stir for 2 minutes and switch off the flame. Kadhi is ready.
  4. Sooji Dhokla: In a mixing bowl add semolina, salt and curd and beat the mixture thoroughly. Set aside for 10 minutes.
  5. Add eno fruit salt and mix well.
  6. Set this mixture in a baking dish.
  7. Now in a big vessel heat 2 glass water. Keep a bowl in between this vessel. Fill it with water. Place this baking tray on it and cover with lid.
  8. Let it steam for 15 minutes.
  9. After 15 minutes check it by inserting the knife in mixture. If it comes clean it means Dhokla is ready. Remove from heat. Let it cool for 10 minutes. Cut square pieces.
  10. For tadka: Heat 2 teaspoon cooking oil and put mustard seeds and rai and when they splutter add curry leaves and green chilli. Sprinkle chilli flakes and pour this tadka on Dhokla.
  11. Squeeze a few drops of lemon juice over it.
  12. Serve it hot with gujarati kadhi.
