Gujarati kadhi is a yogurt based thin curry. Gujarati Kadhi is one of the best recipes of Gujarati cuisine. This authentic recipe requires knowledge of cooking with Indian spices and it gets its delicious taste from curd, besan and curry spices. Gujarati kadhi is distinguished by the addition of sugar or jaggery, which provides a subtle sweetness to the dish.
Steps to make Gujarati kadhi:
- Take all the ingredients.
- In a mixing bowl, add dahi, besan,jaggery,turmeric powder, salt, ginger green chilli paste.
- Mix all the ingredients to make a paste.
- Add water to this paste and make a thin mix without any lumps and keep it aside.
- Heat a pan and add oil to it followed by cumin seeds,Hing, mustard seeds,bay leaves,Cloves, curry leaves and let it splutter.
- Now add the besan mix to this and let it boil on high flame.
- After getting the first boil, cook the kadhi on low flame for 20 mins stirring at regular intervals.
- Switch off the flame when it is done. Take the kadhi in serving bowl and add chopped coriander leaves and serve it with rice.
Traditionally garnished with freshly chopped coriander, it is usually served accompanied. Well, kadhi (at least Gujarati Kadhi) would not be kadhi without the besan. There are a couple of reasons for adding the besan. For one, it prevents the yogurt from curdling.
