- Take 1 medium size potato
- Make ready 1 bitter gourd
- Take 1 sweet potato
- Take 2 big drumsticks
- Get 1/4 pcs raw papaya
- Make ready 4-5 pcs long beans
- Get 1 raw banana
- Get 7-8 pcs dal vadi
- Make ready 1 pc bay leaf
- Take 1 tbsp poppy seed paste
- Take 11/2 tsp ginger paste
- Get 1/2 tsp celery seeds or radhuni
- Take 1 cup milk
- Prepare 1 tsp maida
- Get 1 tsp sugar
- Prepare 1/2 cup white oil
- Take 1 tsp ghee or clarified butter

Shukto is a mix of vegetables with an emphasis to the bitterness, a preparation where instead of hiding the bitterness , it is the taste around which the dish evolves.
Steps to make Shukto:
- At first cut all vegetables in rectangular strips or 2-3 inches length. Like these pictures. All the vegetables need to wash well and keep it aside.
- Take a bowl, add maida into the milk and mixed it well.
- 1st boil potato, sweet potato, drumsticks and raw papaya into boiling water. Boil it for 4-5 mins. Take out all vegetables from boiling water and keep the water for later use.
- Heat oil in a kadai. Fry vadi 1st, then fry long beans and raw banana together. Then fry bitter gourd separately.
- In the same oil, add bay leaf and radhuni. Wait for few seconds. Now add ginger paste, stir it for 1 min, then add poppy seed paste. Cook it till raw smell is gone. Add boiled vegetables.
- After adding boiled vegetables, add salt and sugar. Mixed it well. Pour the vegetable stalk. Cover the lid and cook it for 5 mins. As it’s already boiled, it will not take longer time to cook. After 5 mins, open the lid and add fried vadi, long beans, raw banana, bitter gourd. Again mixed it thoroughly. Cook it until all veggies are completely boiled.
- Now add milk and ghee. Give it a quick mix. Cover the lid and again cook it for 3-4 mins. Switch off the flame. Serve it with steam rice.
