Steps to make Navratan Korma:
- Cut the vegetables in small pieces and boil in a pan except peas and capsicum.Cook till half done.then add peas and capsicum.After 2-3 minutes switch off the flame(don't over cook them)
- Drain the water (don't waste the vegetables stock)we can use in our dish.
- Now add tomatoes. mix well and cover with lid. Cook till soft.Let it cool.Then grind it for a smooth paste.
- Heat some ghee in the pan add cumin seeds and all whole spices.fry and then mix ground paste., garam masala, coriander powder chilli powder and fry till it begins to leave oil.
- Then add some vegetables stock.Bring a boil.Now add boiled vegetables. Add salt and cover with lid for 3-4 minutes.
- Heat 2 tsp ghee in pan.roast some cashews, paneer and raisins till light brown.Take out in a plate.In same pan add chopped onion,ginger, garlic,green chillies and 7-8 cashews.Saute well.
- Add fried paneer and nuts(If you desire can add kewara essence or kasuri methi. Switch off the flame.
- Garnish with chopped coriander leaves.and fried cashews.
