Vegetable Korma is a popular Indian curry in which boiled vegetables are cooked in a creamy and aromatic gravy of yogurt, coconut and cashew nuts based paste and sautéed onion and tomato. Steps to make Vegetable korma:
- For masala paste : heat 1 tsp oil in pan add coriander seeds, fennel seeds, ginger, garlic,green chilles, sesame seeds, cardmom, cloves, cinnamon, fry this for 5 mins then switch off the flame add coconut and coriander leaves,turmeric, add water as required and make fine paste
- Soak poppy seeds and kaju in water for 20 mins & make paste of this
- Boil all the veggies with little salt
- Soak soya bean in water for 10 mins, squeeze water and keep aside
- Heat oil & ghee in wok add bay leaf next add chopped onion fry it till translucent then add tomatoes fry till oil seprates next add masala paste fry well,then add kaju, khus khus paste & boil it for 5 mins
- Next add boiled veggies, vegetable stock, salt, add soya bean stir & give it a nice boil thn add paneer & mushroom
- Cover and cook for 7- 10 mins switch off the flame
- Garnish with coriander leaves and fried kaju
- Note : In this recipe i have used green chilles, though u can also add red chilles
- If vegetable kurma gravy looks thick add some more water the consistency should be medium neither thick nor thin.
