  1. Remove the head and innards of the sardines, and carefully wash all the bloody parts. Pat dry with kitchen paper.
  2. Cut the Japanese leek into 5 cm lengths, and then into half lengthways. Line them up in the baking tray (the cut side facing up).
  3. Line the sardines on top of the leeks. Sprinkle the white wine, herb salt, olive oil and Parmesan cheese on top.
  4. Grill for 15 minutes. Top them with chopped parsley and they're done!
