Instructions to make Green Gram Daal (Moong) / Bottle gourd Pudding (Kheer):
  1. Cut bottle gourd to pieces - any size of choice.Take a 2-3 cubes of jaggery. Qty of jaggery depends on how much sweetness is required and types of jaggery. Add Water and Steam in pressure cooker Wait for 2 whistles.
  2. Add Milkmaid / sweetened condensed milk to the Gourd from Step 1 aboveOR use Plain 2% Fat Milk as SubstitueAdd Cardmom seeds or powder to tasteBoil until boiling hot. (or 2 minutes)
  3. Wash Green gram lentils (moong daal) Add sufficient water and pressure cookAfter 2 whistles (or when Daal is well cooked), remove and Mix with the Gour/Milk/Jaggery mixture from Step 2 above.Serve Hot or Cold.

Moong Dal is Packed with protein and low carbs, green gram otherwise known as moong dal is one of the best vegetarian superfoods. Cooked moong dal along with jaggery and milk is used in Tamil Nadu to make an elaichi-tinged kheer called payasam. Remove from stove and allow them to cool. Open the pressure cooker and mash up the dhal with a ladle. Wash bottle gourd thoroughly, then peel the skin cut into half and remove the center seed part discard it and chop the outer part into cubes.
