- Take the mustard seeds, fennel seeds, fenugreek seeds, and dry red chillies and grind them into a powder
- Heat some mustard oil in a wok and shallow fry the potatoes with some salt and turmeric. You may also deep fry them.
- Keep them aside.
- Again in the same pan, heat some mustard oil and add the kalaunji and cumin seeds. Let the aroma comes out.
- Add the ginger paste, turmeric, fry for 30sec and then add the tomato puree. Mix them very well and cook it till the raw smell of tomato disappears.
- Add the amchur powder and the fried potatoes.
- Stir them altogether.
- Add the powdered masala that was made before. Saute it very well
- Add 2 cups of water. Let it boil
- Add some salt according to your taste and then cover the wok with a lid and simmer the flame.
- After 10min check whether the potatoes have become soft. If it is so, then add some sugar according to your taste
- Mix them very well and add some coriander leaves.
- Remove it from the flame. Your achari dum aloo is ready to be served.
