  1. Prepare your ingredients for the dough
  2. Add the sugar and yeast to a bowl and mix with 100ml water then leave while you move onto the next step
  3. In another bowl add the flour, baking powder and salt then mix really well
  4. By now bubbles should have formed on the yeast mix
  5. Make a bowl in the flour and add the yeast mix and olive oil
  6. Stir the mix together
  7. Gradually add water and mix together to form a dough

  2. Chop the akawi, rinse it and then soak it in luke warm water for 30 minutes (this washes the salt out)
  3. Prepare your Zaatar by mixing it with olive oil
  4. Chop the vegetables (tomato, onion and pepper)
  5. Mix the chopped vegetables with the all spice, cumin, 7 spices, salt, pepper, tomato paste and olive oil
  6. Once the Akwai has soaked, mix half with mozzarella and the other parsley. Using a fork, break the cheese down and mix together ready to apply as a topping

  9. Heat your oven to 220c (hotter the better).
  10. To get the manouche perfect, you need a lot of heat from the bottom so that the dough will be evenly cooked. Its best when you’re able to fold it after its cooked (not too crispy anywhere)
  11. If your oven doesn’t have a bottom heating element then you will probably need a pizza stone. If you dont have one of these then you can do what i did and use a hot pan on the hob to pre-bake the bottom side and then use the ovens grill to cook the toppings and the top side of the dough, it was difficult to do in the kitchen but turned out really well
  12. Roll out the dough and split it into around 10 parts, be sure to add some flour to the surface to stop it from sticking
  13. Using the rolling pin, roll the dough into a circular shape like pizza
  14. Apply the toppings to the base. Spread a little vegetable oil on the dough before adding the cheese to help it cook better then cook in the oven or using the suggestion above
  15. Its done once the toppings are cooked properly and the dough is cooked but not too crispy. You should be able to lift one side and have it fold nicely while looking like the picture below
