Steps to make Dahi Bhalla:
  1. Soak the Dal overnight.
  2. Drain the water out of the soaked dal and add ginger and green chillies to it. Now grind to a smooth paste with very little water.
  3. Add salt & a pinch of hing (asafoetida) to the batter. Now just before frying the wadas, beat the batter in one direction for at least 10 mins. You will see that the batter is getting fluffy. This step is very important for the wadas to become soft and fuffy.
  4. Heat the oil for frying. Leave the wadas in oil slowly avoiding spilling. Fry on a low flame.
  5. Till the wadas are frying we will now prepare water for soaking the fried wadas. In a flat container add a pinch of salt to lukewarm water. Once the wadas are done frying immediately put them in the water for soaking.
  6. Leave the wadas in water for at least 5-10 mins.
  7. Squeeze the wadas to remove the excess water.
  8. In a bowl mix rock salt and sugar to the curd and whisk well.
  9. In a bowl place the wadas and pour dahi over it. Now garnish with tamarind chutney, green chutney, chaat masala,red chilli powder, roasted cumin powder & coriander leaves.
  10. Yummy & Soft dahi bhallas are ready to be served
