This garlic butter sauteed clams are inspired by my recent travel to Italy. Every restaurant I went to, there is a section of the menu dedicated to seafood, and sauteed clam is always on top of the list. As the name suggests, the clams are cooked with a combination of garlic, butter, olive oil, parsley, with lemon juice.

The ingredients needed to make Sauteed clams:
  1. Make ready 1 stick unsalted butter
  2. Get 1 medium tomatoes diced
  3. Make ready 1/2 large red onion sliced in strips
  4. Prepare 2 jalapeno sliced in strips
  5. Get 6 mushrooms halved then sliced
  6. Take 4 garlic cloves minced
  7. Make ready 1 tbsp dried parsley
  8. Make ready 1/3 cup fresh lemon juice
  9. Take 1 salt and pepper to taste
  10. Prepare 5 lb cleaned clams
  11. Get 1 cup grated parmesan cheese
  12. Take 1 loaf crusty baguette bread toasted

Remove from heat and transfer clams and juices to a large serving dish or bowl. Pour olive oil in a large sauce pan. Cook celery, onion and garlic over medium heat until onions are clear. Reduce heat, cover and simmer until clams open.

Steps to make Sauteed clams:
  1. Add first 9 ingredients to large pot, simmer for about 3 minutes add clams, stir to evenly coat, cover and cook over medium high heat for 5 minutes, stir, cover and cook about 4 more minutes, discard any unopened clams. Place on large serving tray sprinkle with Parmesan, enjoy! Use bread to sop up all the yummy juice!!

Saute the garlic until slightly browned, then add the clams. Stir a few times before adding the white wine and tomatoes. Cook the clams until they are all open, add the salt, lemon juice and chopped parsley. Drain and rinse well, discarding any that fail to close to the touch. Add clams, cover, and steam till clams start to open.
