- Take 1 tsp Chilli Powder
- Get 1 tsp Turmeric Powder
- Take 1 tsp Garam masala Powder
- Take 1 tbsp Coriander leaves
- Take 4 Onion
- Make ready 3 Tomato
Kathal biryani or Jackfruit biryani recipe - a mildly spiced dum cooked biryani made with raw unripe jackfruit, also called as kathal in hindi. Usually the jackfruit pieces are either fried, sauteed or steamed. I did not want to do any prepping of the jackfruit as making biryani itself is time-consuming. Kathal biryani is made with Jackfruit - unripe, tender jackfruit which is known as pala moose in tamil.
Instructions to make Jackfruit Biryani (Chakka (ചക്ക)/ Kadgi/ kathal Biryani):
- For Rice Preparation: In a pressure cooker add ghee/ oil. Fry few cashew nuts & raisins. Keep aside. Now add 1 cinnamon,5 cloves,5 cardamom pods &1 bay leaf. Add water (for 1cup rice 2 cups water). Bring to boil. Add 1 cup rice (Jeerakasala rice been used for this preparation). Cook till 3 whistles. Keep it aside
- For Masala: Chop the Jackfruit into desired cubes. Boil water & add Jackfruit pieces, little salt & cook for about 10 to 15 minutes. Drain the water & allow them to cool. Marinate it with little turmeric powder,red chilli powder,garam masala, ginger garlic paste salt & little water/ curd. In a pan add oil & shallow fry the marinated Jackfruit. Keep it aside.
- In same oil, add 2 chopped onions & saute well. Now add 2 green chillies, ginger garlic paste & saute well. Add turmeric powder, red chilli powder,garam masala powder, tomato (1) &salt. Add shallow fried Jackfruit & mix well. Now add cooked rice & mix well. Cook under cover for 5 minutes.
- Garnish with roasted cashew nuts & raisins, chopped coriander leaves. Serve with Pappad, pickle & salad.
- Salad Recipe - Chop onions, tomatoes & green chillies finely. Mix well. Add curd& salt.
I have made it in pressure cooker. This kathal biryani recipe turns out spicy and delicious. The texture of pala moose goes well for a biryani. I am trying kathal biryani for first time. Jack fruit Pulao has its own unique taste.
