- Take tamarind paste,we can take chutney also.
- In water add Tamarindpaste Add green chille ginger paste,all spices, boil it for 10 mins,and let cool(optional)
- Now for flavours:-1
- First well will make tamarind flavour add Tamarindpaste in flavoured water(boiled and cooled)
- Divide water in 5parts1. Is tamarind itself.
- 2.for chatpata mint flavour *crush mint and green leaves
- Add this paste in one divided portion.add some jal jira powder.
- 3.For hing flavour add some hing and rosted jeera powder.
- 4.For spicy Garlic Flavour add garlic paste with some more chillies/or red chillie powder.
- 5.For khatta mithha Flavour add some Jaggery /sugar in flavour water.
- Make aloo chana masala add spice,in boiled alu and chanaand Coriander leaves.
- Fill this masala in puri.serve with flavoured pani.
- You can sprinkle sev,bundi in puries.as per choice
