Steps to make Sweet Kozhukattai:
  1. Preparing the stuffing.In a Kadhai add grated coconut and grated Jaggery. Keep it on medium-low flame and mix the Jaggery and coconut.
  2. Add 1/2 spoon ghee and elaichi powder, stir the coconut Jaggery mixture. Jaggery will begin to melt.Keeping stirring continuously.
  3. Add cahewnuts and badam powder to the above and stir well.This is optional.It gives good taste so I have added. Cook till moisture from Jaggery begins to dry. Some people add little rice flour which helps to absorb moisture. But here I have added cashew nut powder. Do not over cook as Jaggery will harden. As soon as moisture from Jaggery begins to dry off the flame. You can see the mixture in the pic below. Place it aside to cool.
  4. Preparing Dough- Take 1.5 cup water in another Kadhai and add little oil to it. Keep it on medium to high flame. Add little salt to it.
  5. Water should come to roll boil.
  6. Then reduce the flame and add the rice flour slowly. Quickly mix the rice flour and water so that lumps are not formed. Mix well and off the stove.
  7. Cover it with a lid for 5 minutes. When it is slightly hot begin to knead the dough. Knead it to a soft and smooth dough. Then cover it with a damp cotton cloth.
  8. After about 10 minutes start making small balls out if the dough. Now gently flatten it with your fingers.Keep center little thick and edges thin. Make a small bowl like shape and fill the coconut stuffing inside it.
  9. Now bring the sides in the centre and slightly press and join them.
  10. Take a idly pan.Pour water in it and allow it to boil. In idly stand or plates place these kozhukattai. Now place theseinside the hot idly pan and cover it with lid. Steam it for 5 to 8 minutes on medium flame.
  11. Carefully remove it from hot pan. Let it become little warm.
  12. Offer the kozhukattai to Lord Ganesha.
