The ingredients needed to make Ariselu/Adhirasam:
- Take 4 cups Rice
- Take 3 cups jaggery

Adhirasam/Ariselu is a Traditional South Indian sweet prepared on Diwali. It is prepared using rice flour and jaggery. This sweet can be prepared with sugar also, but since I avoid using sugar as much. Adhirasam (Tamil: அதிரசம்) or Kajjaya in Kannada or Ariselu in Telugu or Anarsa in Marathi or arisa pitha in Odia is a type of Indian sweet from Tamil cuisine, Kannada cuisine, Telugu cuisine and Marathi cuisine and Odia cusine.
Instructions to make Ariselu/Adhirasam:
- Soak rice for 2 hours.After two hours drain the water completely and keep it aside for 15 mins.
- Then grind the rice to make fine powder.Sieve it twice to get fine rice flour.Now the rice flour is ready.
- Grate the jaggery.Heat pan and put some water in it.Then add the jaggery and allow it to melt.Then strain the jaggery water into another bowl.
- Now put the pan with jaggery water on to the stove and switch on flame.Allow it to boil.
- Check the jaggery syrup for the consistency.We checked with hands itself. Once the jaggery syrup make a ball in between finger then the syrup is ready.
- Then switch off the flame and add the rice flour slowly to the jaggery syrup.Add 3 tbsp oil also.Mix well till it become like dough.
- Heat oil in frying pan.Take some thick cover and apply oil to it.Take dough ball in hand and flatten it like appam on that oil cover.
- Then take sesame seeds in a plate and coat the ariselu into it on both sides and drop in the oil.Allow it to fry on both sides.
- After frying on both the sides remove from oil and drain excess oil by pressing with rolling pin in another plate.Put it on tissue paper.
- After removing excess oil keep it in air tight container.
