- Chop fenugreek leaves/ methi bhaji finely and wash with water. In mixing bowl add both flours, chopped fenugreek leaves /methi bhaji, green chillies ginger paste,red chilli powder, turmeric powder, dhania jeera powder, salt, fresh cream,curd..mix and bind to soft dough.(If needed add little water to bind)
- Heat oil in kadhai. Place a plastic sheet on Puri press board. On it place a portion of bajra- methi dough flatten ball..
- Cover and press lightly to make 3" debhra..on it sprinkle white sesame seeds.
- Slowly pick the debhra from plastic sheet,drop in hot oil,deep fry on medium flame,on both sides to golden brown in colour.
- Similarly prepared all debhras.Serve / relish hot Methi bhaji na dhebras with mango sweet - sour pickle (chundda) or curds.
