I have made the Chicken liver Masala recipe very simple to keep the liver moist and flavourful to your liking. Adjust the water measure if you prefer more gravy. Steps to make Saucy Chicken Liver Masala:
  1. Soak your liver in water and vinegar for a few mins. Wash it off.
  2. Marinate liver with ginger/garlic paste, chilli powder, tumeric, coriander and garam masala and set aside for 30mins.
  3. In a pot, add oil, curry leaves, onions and mustard seeds and fry on low - medium heat. Add your whole green/red chillies (optional)
  4. Pour in your marinated liver.
  5. Saute for 5 minutes. Then add in salt.
  6. Add in your chopped tomatoes, mix well and let it cook till the tomatoes soften.
  7. Liver is ready to serve!
  8. Note: You can skip the tomatoes and do a dry fry - still as delicious.

This sauce is great for making homemade chicken tikka masala, but it also goes with just about anything ever - kind of like a curry. Chicker liver is hubby's favorite, I am not so fond of it.
