  1. Soak the ambula pieces in water for 30 minutes to 1 hour.
  2. Grind mustard seeds, ginger and green chilli together to make a smooth paste.
  3. Mix the mustard paste, curd, grated coconut and salt together.
  4. Then add the soaked Ambula (dried mango pieces) in it.
  5. Heat a small pan with oil and add punch phoran in it. When they crackle then add the red chilli and curry leaves in it and switch off the flame.
  6. Then mix it with the curd and rai paste. Mix it well and your Ambula rai is ready to serve. Serve it as a side dish with any type of rice.
