The ingredients needed to make Khaman:
  1. Prepare 1 Cup Gram flour (besan)
  2. Get 1/2 Cup water, room temperature
  3. Get to taste salt
  4. Take 1 teaspoon turmeric powder
  5. Take 1 tablespoon powdered sugar
  6. Get 1 tsp cooking oil
  7. Take 1 tsp eno fruit salt
  8. Get 1/4 tsp baking soda
  9. Get for Tempering:
  10. Prepare 2 tablespoon cooking oil
  11. Get 1 tablespoon mustard seeds (rai)
  12. Prepare 2-3 green chilies chopped
  13. Take 2 tablespoons granulated white sugar
  14. Prepare 1 Cup water

Khaman Dhokla is a soft and spongy Gujarati snack which has a slightly sweet and tangy taste. This recipe is quite healthy as is made by steaming besan (chickpea flour). Steps to make Khaman:
  1. Sift the gram flour in a bowl. Add salt, turmeric powder, sugar and mix nicely.
  2. Add in the water and mix it well for 5-10 min. Cover the batter and set aside to rest for 5 – 6 minutes.
  3. Add fruit salt and baking soda to the dhokla batter and mix nicely. The batter will rise and turn frothy. Do not whisk the batter for too long, once combined stop whisking.
  4. Set up a steamer. Pour the batter into the greased microwave-safe bowl and arrange it in a large bowl. Fill 1/4 of the steamer with water. Cook dhokla in the steamer for 20-25 min.
  5. Do not open the lid before 20 min. Insert a toothpick or a knife in the center to check the doneness. Once cooked, allow the dhokla to cool down for few minutes before inverting and cutting into pieces.
  6. For tempering: Heat oil in a small pan over medium heat. Add mustard seeds, once seeds crackle, add in green chilies. Sauté for few seconds and then add the white sugar. Mix nicely.
  7. Pour water and stir to dissolve the sugar nicely. Once sugar is dissolved, turn off the heat. And let it cool.
  8. Pour this tempering over the dhokla. At this stage, you can keep Dhokla in the fridge to chill down and soak the syrup flavors or you can serve it immediately.
  9. Garnish dhokla with chopped coriander leaves.
  10. Notes: We forgot to add turmeric powder to the batter so we added it in the tempering.
