In this recipe we make pie with Arumanis mango, but you can use any mango as you like and any kind that available in your country. This Mango pie recipe one of my husband's favorite postres. It is a typical dessert from Ciudad Mante, in No-Bake Mango Pie Recipe. This recipe has been adapted from the magazine, "Mexico Hello This is my favorite pie and I was so excited to find the authentic recipe here as it has been a while.
Instructions to make Authentic Mini mango pie:
- First in a bowl sift flour, sugar and salt.Mix until well combined.
- Then add in the cold butter cubes and gently crumble it with hands (don,t melt the butter). Until the texture is like bread crumbs.
- Then gradually add 1 or 2 tsp of chilled water and gently mix with hands until dough is formed.
- Then cover it in cling wrap and chill it for 1 hour in fridge.
- Then take out the dough portion it in 6 pieces sprinkle flour on it and flat it almost half inch thick.
- Do the same procedure with all the dough.
- Then take one flatened disk and place 1 tbsp or to taste of homemade mango marmalade.(You can check out my homemade mango marmalade recepie).
- Then place another disk on top and cut the edges with a cookie cutter or glass. And then make design in the corners using your finger or fork.
- Then make all the pie with the same procedure and then bake them in preheated 180 degree oven for about 20 - 25 mins or until golden brown from top and bottom.
