- Prepare 500 gms chole
- Get 3 Medium sized onions
- Take 1 garlic knob

- Prepare 1 teaspoon turmeric powder

- Prepare 1 teaspoon garam masala powder

- Take For Puri
- Get 2 cups flour
- Get 2 teaspoons carom seeds
- Prepare 2 Tablespoons refined oil
- Take as required water
- Take as required Oil for frying

Recently I tasted a big sized, puffy Chola poori with chana masala in Hotel Saravana bhavan,Salem. Actually speaking, Punjabi special chole bhatura was in my try list for years. Chole bhature (Hindi: छोले भटूरे) is a food dish originating from northern India.
Steps to make Chole puri:
- Soak the chickpeas in water for 8-10 hours. Then drain the water and add it to a pressure cooker and add 4 cups water and some salt to it.
- After 5 to 6 whistles on medium flame, putt off the flame.
- Mash the chickpeas slightly with your hands.
- Heat oil in a pan and 1 onion to it.
- Now take a jar and add remaining onions, garlic, ginger, garam masala(exept cumin seeds and bay leaves) and fried onions to it and grind..
- Now add cumin seeds and bay leaves to the oil and when they starts crackling add that paste to it..
- Now add salt red chilli powder, coriander powder, turmeric powder and garam masala powder to it and mix well..
- Keep stirring it and fry it for 2-3 minutes till the oil starts separating..
- Now add the chickpeas to it and mix well
- Cook it for more 5 minutes then add curd and water(if needed)..
- Cover the pan and cook for 10-12 minutes on a very low flame..
- When the gravy thickens put off the flame and take it out in a serving bowl and garnish it with some ginger and green chillies…
- For puri, add flour, carom seeds, salt and oil in a mixing bowl..
- Knead a soft dough of it and keep it covered for 5 mins to rest..
- Now make small balls of it and roll them evenly from the centre.. (Puri should not be too thick or thin)
- Now heat oil in a kadhai on a medium high flame.
- Now slide the puri carefully to the hot oil and fry..
- Take it out and place it on a tissue paper..
- Make all your puris like this..
- Now serve your chole puri with achaar
