The lahsun ki chutney is a favourite Rajasthani condiment prepared with mainly garlic, tomato and chilli, and other spices for additional flavouring. Garlic is briefly cooked in hot oil to bring out its aroma and temper its heat for this Rajasthani chutney. The bold condiment is served alongside rice or on breads like paratha and roti.
Instructions to make Spicy Lahsun Chutney:
- Oversoaked red chillies in hot water for 2 hrs.
- Heat 1 tbsp oil in a pan, add cumin seeds, lahsun. Saute for a min.
- Add ginger, saute for one min.,add red chillies, saute for one min. on low flame. Turn off the flame. Let it cool down.
- In a blender jar, add fried lahsun,red chillies, ginger and little water. Blend them to make paste
- In the same pan, add 1 tbsp oil, half cumin seeds, rai, hing. Let them crackle, add lahsun paste. Cook for 5 mins.on low flame.
- Add salt to taste, mix well. Spicy Lahsun chutney is ready to eat with roti, paratha, pakode. Enjoy!!!
