Benne dosa or benne dose is a type of dosa which traces its origin from the city of Davangere in Karnataka, India. The term "benne dosa" in English language simply corresponds to butter dosa. It is prepared by addition of generous amount of butter while preparing the normal dosa, and accompanied by coconut chutney.

The ingredients needed to make Benne Dosa:
  1. Make ready 1& 1/2 cup Idly rice
  2. Make ready 1/2 tsp Fenugreek seeds
  3. Make ready 1/2 cup Urad dal
  4. Get 1 cup Puffed rice/ pori
  5. Take 1-2 tsp Salt
  6. Take as needed Butter for roasting

Its crisp on one side and so spongy on the other. Davangere benne dosa is usually served with a potato filling (called as potato palya) and a spicy coconut chutney. The one we had were just mashed potatoes, but I did want to give some tempering. So sauteed some onions & green chili in oil for the potato stuffing.

Instructions to make Benne Dosa:
  1. Take rice, urad dal and fenugreek seeds in a container and rinse well. Soak them for 5 - 6 hours.
  2. Soak puffed rice for 5 minutes.
  3. Grind the soaked rice, lentils and puffed rice/pori. Use required water and grind until smooth.
  4. Add salt and ferment it for 7 - 8 hours.
  5. Now heat the pan, pour a ladle full of batter and spread it. Do not spread it too much or do not make it too thin.
  6. After few seconds, drop small chunks of butter all over the dosa. No need to close the lid. If you prefer, flip and cook on the other side for a few seconds.
  7. Take out the dosa from the pan, when the sides are turning golden brown in colour.
  8. Serve this with coconut chutney/sambar.

The chutney that is served is very spicy and is made with minimal ingredients. As benne dosa was cooking on the griddle, my hunger pangs began to roar for the food. Davanagere special benne dosa isn't a paper thin dosa like masala dosa. It's bit thick yet turns crispy when cooked in generous butter. Moreover, the unique coconut chutney and potato masala that pair the dosa are damn good.
