  1. Make ready 1 cup besan/gram flour
  2. Take 1 cup Curd
  3. Take As needed Water
  4. Make ready To taste Salt
  5. Get 1 tsp Ginger paste
  6. Make ready 2 tsp Grated coconut
  7. Make ready 2 Green chillies
  8. Make ready 1 tsp rai(mustard seeds)
  9. Make ready 2 tsp Coriander leaves
  10. Prepare 1/2 tsp Turmeric powder

Khandvi is a popular Gujarati snack made from a batter consisting of gram flour, yogurt, turmeric, and ginger paste. The batter is cooked and rolled in small, bite-sized pieces. Khandvi, other wise called as Surali Vadi or Patuli is a spicy gram flour rollups made using gram flour, yogurt and some basic spices. Steps to make Kandvi:
  1. Take 1 cup of besan (gram flour/chickpea flour) and to that add 1/2 cup curd mix it well.
  2. Now add some water and make a thin and watery paste of it. About 2 glasses of water will be used.
  3. Now add 1/2 a tsp of haldi powder. And mix it well. Also add ginger paste and some grated Ginger to it. Also add some green chillies to it. Now the batter is ready.
  4. Now pour the batter in to a kadhai and put the flame on medium on first five minutes and then turn the flame to low. Stir it continuesly scrapping the sides. This thing can be batter done by a plastic spatula. The main thing is to check that how much the batter is thickening and ensure that batter is not sticking to the kadhai.
  5. Stir the batter continuesly after some minutes you will notice that the batter is thickening, don't hurry cook it for some for time. It would take approximately 15 - 20 mins.
  6. Now grease 4 plates / Thalis with some oil.Grease the backside of plate and then spread the batter over it. Make sure that you spread the batter evenly. Now let them set for a couple of minutes.
  7. Now check the kandvi by putting your finger over it. If none of the batter is sticked to your hands then it is a perfect time to roll it.
  8. Now make some cuts on the kandvi and roll it. Kandvi is ready but tadka is remaining😀.
  9. For tadka take some oil, to that add rai, hing and some coriander leaves in a pan. When they all start to pop up turn off the flame and pour the tadka over it.
  10. If you want you can also add some grated coconut and dhania leaves
  11. Yummy kandvi are ready!!!!!
