- In a mixer add onion, tamatoes, ginger and green chillies and make a fine paste.. Heat oil in a pan add this paste and cook it nicely.. Add salt, red chilly powder, turmeric powder, corriander powder and chopped coriander leaves and again cook it nicely.. After that add the roasted peanut powder and cook it for more 2-3 mints.. Now let the filling be cool down..
- Fill the mixture into the brinjal nicely.. Again heat the pan add oil once heated add cumin seeds than add the filled brinjal and roast it from all side by covering it..
