Pani Puri recipe or Golgappas Recipe - puffed puris stuffed with ragda, sometimes moong I am happy to share the pani puri recipe from the streets of Mumbai. I have lot of vivid memories of eating. Pani puri or golgappas is my most favorite chaat from childhood. I used to have them often on the streets and it was something I have thoroughly enjoyed.

- In a mixing bowl add maida, suji, salt and baking powder. Mix and make a dough using sufficient water. Make a soft dough.
- Once the dough is ready, cover and let it rest for 30 mins.
- Heat oil to very high. Just before smoky point.
- Make 3 portions out of dough and then roll it thinner than a chapati but not much thin otherwise it wont puff! Cut it using a cookie cutter/glass.
- Now drop these in very hot oil. Lower the flame and fry until golden.
- Take the puris out from the oil and put them in a plate and let them cool.
- For pani blend all the ingredients together in a jar and mix it in 1.5 litre water.
- Mash the boiled potatoes and mix it with all the masalas. Serve
