Homemade masala paste We need to make a raw paste. Squeeze the tamarind in the water to extract all the juices. Strain the juice and set aside the tamarind pulp / juice. Fish curry is one of the most special recipes and it tastes finger licking good.

  1. Clean, wash and then marinate pieces of fish with 1 tsp turmeric powder, salt; keep it for 5-10 minutes.
  2. For garam masala powder,roast cinnamon, green cardamom and cloves for a while,then cool it and make a powder.
  3. Heat oil in a pan,till it reaches smoking point.
  4. Add marinated pieces of fish,fry both sides till colour change, keep it aside.
  5. In same oil add onion paste,fry it till golden brown.
  6. Add ginger paste, cook it till oil separated.
  7. Add tomato puree, cook it again for 5 minutes.
  8. Add rest turmeric powder, cumin powder, coriander powder,red chilli powder, cook it for 5-6 minutes.
  9. Add water and allow it to boil for couple of minutes.
  10. Now add cashew nuts paste, salt and sugar, cover and cook for 1-2 minutes.
  11. Add pieces of fish, again cover and cook for 5-6 minutes or till it done.
  12. In low flame add orange juice, orange zest, slited green chillies, prepared garam masala powder, chopped coriander leaves and put off the flame.
  13. Serve with steamed rice and enjoy.
